The Katsuo Bonito Kitchen Slicer is one of the most important utensils in Japanese cuisine, designed to slice the very hard, dried Bonito fish (Katsuobushi) into fine shavings. The flakes are used to season dishes and to make dashi, a Japanese broth. The slicer can also be used to cut salami or hard vegetables into fine slices. The wooden body is handmade from Japanese red oak; the blade is made of Blue Paper Steel (not rustproof). The cutting block can be easily removed, and a wooden cover protects the blade when not in use. 190 x 70 x 95 mm
