With its beveled end, the handle perfectly fits the heel of the hand and provides a very ergonomic grip. The dark and elegant handle encompasses a hand-forged, 33-layer blade which creates a beautiful Suminagashi pattern. The cutting edge is forged from VG-10 steel. Professional chefs agree that the knives lie comfortably in the hand and that it is good and easy to work with. Hardness 61 HRC, rustproof, double-bevelled.
