Description

These Japanese kitchen knives are made in the traditional Hokiyama knife factory, which was founded in 1919. The high contrast Japanese Damascus steel blade consists of a total of 49 layers and is polished to a mirror finish. The core cutting layer made of Hitachi SLD steel* guarantees excellent sharpness and edge life due to its high carbon content; rustproof side layers facilitate maintenance. The perfect look of this Japanese knife is completed by an octagonal handle made of walnut wood, optionally with a black or red laminated wood ferrule. Double bevel, hardness 62 HRC.
