Soba Kiri, Japanese Noodle Knife

Description

The traditional Japanese noodle knife with Hinoki wood handle, also called »Sobakiri«, is an indispensable helper when it comes to making genuine Japanese noodles. The knife cuts the rolled dough into strips in no time. It is fairly heavy to make it easier to cut the dough, and is used with a slight forward movement. In addition, the blunt end of the knife can be used as a spatula to put the noodles directly into the boiling water. The blade is made of 1K6 rustproof steel and is easy to resharpen. Due to its single bevel, the knife is only recommended for right-handers. Hardness 58 HRC.
