For the best results, kitchen tools, like any other tools, need to be kept absolutely sharp. With sharp kitchen utensils you will not only have more fun and achieve better results with less effort, but also make working much safer. You will be able to see and taste for yourself that only the best ingredients and kitchen equipment go into making meals that are both attractive and flavourful. After sharpening, you will put your knives to the test while you cook a delicious meal with Zara Valenti.
In this course you will get to know the two basic requirements for aesthetics in the kitchen
  • Introduction to sharpening knives on Japanese waterstones - the basis for quick and precise cutting
  • Slicing and decorating to perfection
Spring-An Italian classic is on the menu: Brasato alla Milanese with saffron risotto and orange gremolata. You can test your sharp knife while slicing the veal extremely thin. As an intermediate course we will enjoy vegetable antipasti with air-dried premium ham/prosciutto, parmesan and burrata. You can also practice precision cutting with the dessert which is Mozart-Knödel on finely diced caramelized fruit. .
Autumn -You can practice precision cutting techniques with our first appetizer, fish tartar on orange carpaccio with avocado and pomegranate seeds. Then we will prepare our porcini mushroom risotto. Our main course, Kalbsvögerl with cream sauce, is served with potato and celery puree. For dessert, apple strudel with crème fraiche, you can cut the apples into wafer-thin slices and test your freshly sharpened knife once again.
